Introduction
This recipe is perfect for days when you're looking for a delicious and quick Moroccan dish. It combines the rich flavors of meatballs with the refreshing tomato sauce and eggs, all in one pan and an irresistible taste!
Ingredients
- 300 grams ground beef
- 1 small onion finely chopped
- 2 cloves garlic finely chopped
- 400 grams crushed tomatoes (or 3 chopped tomatoes)
- 1 tablespoon tomato paste
- 4 eggs
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- Salt to taste
- 1/4 cup chopped parsley and coriander for garnish
Instructions
- In a large pan over medium heat, heat the olive oil. Add the chopped onion and stir until it softens and becomes translucent.
- Add the chopped garlic and stir for a minute until its aroma is released.
- Add the meatballs to the pan and stir well to break them up and brown them from all sides.
- Season the meatballs with cumin, paprika, black pepper, and salt. Stir the ingredients well to combine the flavors.
- Add the crushed tomatoes and tomato paste. Stir the mixture well and let it simmer for 5-7 minutes until the flavors combine and the sauce thickens slightly.
- Using a spoon, create 4 small holes in the meatball sauce. Crack an egg into each hole.
- Cover the pan and let it simmer over low heat for 5-8 minutes, or until the egg whites are cooked and the yolks are still runny as desired.
- Garnish the dish with chopped parsley and coriander and serve it hot immediately with Moroccan bread.
To add a touch of authentic Moroccan flavor and a deeper taste, you can add a pinch of thyme or a little harissa (chili paste) at the beginning of preparing the sauce. This dish is served perfectly with fresh bread for dipping in the rich sauce.
