Moroccan Meatballs with Eggs in a Pan

Introduction

This recipe is perfect for days when you're looking for a delicious and quick Moroccan dish. It combines the rich flavors of meatballs with the refreshing tomato sauce and eggs, all in one pan and an irresistible taste!

Ingredients

  • 300 grams ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic finely chopped
  • 400 grams crushed tomatoes (or 3 chopped tomatoes)
  • 1 tablespoon tomato paste
  • 4 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1/4 cup chopped parsley and coriander for garnish

Instructions

  1. In a large pan over medium heat, heat the olive oil. Add the chopped onion and stir until it softens and becomes translucent.
  2. Add the chopped garlic and stir for a minute until its aroma is released.
  3. Add the meatballs to the pan and stir well to break them up and brown them from all sides.
  4. Season the meatballs with cumin, paprika, black pepper, and salt. Stir the ingredients well to combine the flavors.
  5. Add the crushed tomatoes and tomato paste. Stir the mixture well and let it simmer for 5-7 minutes until the flavors combine and the sauce thickens slightly.
  6. Using a spoon, create 4 small holes in the meatball sauce. Crack an egg into each hole.
  7. Cover the pan and let it simmer over low heat for 5-8 minutes, or until the egg whites are cooked and the yolks are still runny as desired.
  8. Garnish the dish with chopped parsley and coriander and serve it hot immediately with Moroccan bread.

To add a touch of authentic Moroccan flavor and a deeper taste, you can add a pinch of thyme or a little harissa (chili paste) at the beginning of preparing the sauce. This dish is served perfectly with fresh bread for dipping in the rich sauce.
